Whats for dinner?




This morning I faced the question that most chefs face every day.. What do I have, (thawed out chicken) and what can I do with what I have. I mean its chicken breast.. K is finicky about excessive rice, and to be frank I was too, so I looked down and low and behold potatoes.. yawn..potatoes and chicken.. I knew wanted something herbey and spicey and I think yum chimmichuro marinade for the chicken. Lastly I needed a veggie and a sauce..my freezer popped out peas.. where I can make it both veggie and sauce.. here's what unfolded:

Chimichurro chicken, crusty potato wafers and pea puree

Chicken Marinade (serving 4)

2 whole Chicken Breast – sliced on a bias

1 cup - Parsley

2 tablespoons - Red pepper flakes

5 clovevs – Garlic minced

¼ cup - Red wine vinegar

1 cup – Good Olive oil

To taste- Salt / Pepper

Blend all ingredients and marinate for at least one hour. Now, make your flour mix.. ALWAYS season your flour, I used garlic powder and salt but feel free to add any herb or seasoning that you used in the panko mix for the potatoes. Put aside till ready to cook chicken

Dust chicken breast in flour and brown chicken on all sides put in oven for 20 mins at 350 degrees

Herb potato wafers

5 – russet potato – peeled and cut into 2 inch discs

1 cup - panko bread crumbs

1 ½ tbsp – each dry herbs (oregano, parsely, rosemary, thyme,

2 tbsp - garlic(powder)

2 egg whites (for egg wash)

1 tsp- of water

To taste- salt/ white pepper

flour

1 tbsp - salt

Peel and slice potato into 2 inch slices (note* have some water available to put potatoes in while skinning and cutting to prevent oxidization aka brown ass potatoes) but potatoes in heavily salted water, bring to bowl cook till al dente. Ice bath and drain /dry. Once dry season with salt and pepper


While potatoes are drying/cooling make your panko crumbs mix panko, herbs, salt/pepper , mix your egg wash mix the egg whites with water ,salt and white pepper. Put oil pan (about ½ way up pan) and heat till 345-350 degrees..

Time for assembly, dip potato into egg wash, then into the panko mixture. Press down (so you're assured the panko/herbs stick)


Place on grill sheet for about 20 mins (this lets the crumbs get friendly and stick to potato).

Once oil is @ the right temp cook potatoes till golden brown about1 min on each side.

Drain and serve or put in oven to store (if not serving immediately)


My pea puree (makes 2 cups)

½ bag frozen peas (about 2 cups)

¼ cup diced onion

6 garlic

6 slices bacon

3 tbsp - red wine

1 - c.stock

½ cup – plain yogurt

To taste - salt/pepper

3 tbsp - butter

2 tbsp - lemon juice

Put bacon in cold sauce pan, turn up heat to med-low and render fat then add onions and garlic. Cook till trans add peas cooked 2 mins, add red wine cook 3 mins add c. stock reduce to simmer. Cook for 10 mins.


When done remove bacon and put in food processor or blender, add butter, lemon juice and yogurt. Blend till smoothy consistency. Strain liquid back into pot with cheescloth or strainer chop bacon and add back to pot serve or reserve till serving...

Here is the finished product pea puree at the bottom with red pepper flakes, potato wafers on top chicken on top of that.. twas YUMMY! Tell me your thoughts did you try this recipe?
