Make your 4th of July food POP!

So you've been invited to a bbq/pool party/park/backyard celebration this year and besides wine/beer/chips or plastic cups, you want to bring something special. But what? Something simple and something good?

Well here are a few easy, delicious sure fire hits to bring to your festivities!! Enjoy!

Marinated Grilled Corn with Avocado Butter



Plan time: one – two days before the event

5 Corn - shuck corn and cut off 1 to 2 inches off tops, leave on the last layer of husk.
5 Tbsp - salt
3 Tbsp-Thyme
1 Tbsp - vinegar
3 scotch bonnet – cut in quarters (remove seeds unless you like your mouth on fire)
1 ½ Tbsp -ginger
4 – cloves of garlic

Avocado Butter
2 Avocado
2 bars of real butter
1 Tbsp – cilantro
1Tsp - Salt
In large container put corn in enough water to cover, add salt, thyme, vinegar, scotch bonnet, garlic and grated ginger. The corn will float at first so you will need to weigh them down. Your corn can sit in the marinade at a minimum 1 day at a maximum for 3 days.

Soften butter at room temperature, split avocado and mash flesh, mix with butter add a pinch of lemon juice, cilantro salt. Mix well to incorporate all ingredients and store in a container till ready to serve with corn.

To grill remove corn from marinade and re-shuck them (put husk back in place) and place on grill for 15-20 min turning every 5 min or soo.. if on a gas grill then on high for 10 min turning often. Don't worry about husk turning color or even burning.. (that's okay it will burn out, remember thee corn has been soaking in liquid for a few days)

When your corn looks like this its done

Once done shuck and coat with butter.. 

Jerk hot dogs with Mango Relish


 
Plan time: one – 3 hours before event
1 pack (8) - Beef/Turkey/Chicken Hot dogs
Jerk Seasoning Marinade
1- tsp liquid smoke
Veg oil
3 Tbsp - Jerk Seasoning
2 Mango – seeded and cut in half
1 head of lettuce
1 red onion – cut in half

Marinate hot dogs in 1 hour in Jerk Seasoning Marinade

To Cook
On rack of uncovered charcoal grill place mango halves, onion, and hot dogs directly over medium coals. Grill for 8 minutes, or until mango hot dogs are browned and heated through and onion is crisp-tender, turning once halfway through cooking. Set aside mango, onion, and brats.
 
Lightly brush romaine with marinade and grill 1 to 2 minutes, directly over medium coals, until lightly browned and wilted, turning once.

For relish, chop grilled mango and onion. Combine in bowl with 1 Tbsp of the jerk seasoning, and salt and pepper. Serve brats in buns with relish and romaine.


Grilled Potato Chips


 
Plan time: one – 2 hours before event

1 lb- potatoes (russet or long white), cut diagonally into 1/16-inch slices
3Tbsp cooking oil
5 _ cloves of garlic
2 - bay leaves
2 Tbsp - dried thyme, crushed
½ Tbsp coarse salt or seasoned salt

Par cook potatoes. That means cook them for 2 to 3 minutes or until potatoes are crisp-tender; drain. Place in a single layer on paper towels.

While potatoes are drying steep oil in garlic. Heat oil on low add garlic cloves whole, thyme and bay leaf cook low for 30 mins. 
 
Carefully brush both sides of potato slices with garlic oil. Sprinkle with thyme and salt.

Preheat gas grill. Reduce heat to medium-high. Place potato slices on the grill rack directly over heat. Cover and grill for 15 to 20 minutes or until potatoes are browned, turning occasionally. Remove from grill. Let stand on a paper-towel-lined baking sheet for 8 to 10 minutes. (Chips will crisp as they stand.) 

To use a charcoal grill, grill seasoned, precooked potatoes on grill rack over medium coals for 15 to 20 minutes, turning occasionally. Serve as above.

Hummus and Grilled Pita Chips

Plan time: one – hummus 1 day, chips day of

1 can garbanzo beans(chick peas)
½ Tbsp – Tahini
3 cloves – garlic
2 Tbsp – fresh lemon juice
½ tsp- smoked paprika
½ tsp- cumin
1 Tbsp – Sesame oil
1 cup- Olive Oil
1 pack – Pita Bread

Mix all ingredients in food processor or blender

Brush Pita with sesame oil and grill till crisp serve with Hummus

Grilled Green Beans

Plan time: day of

12 ounces green beans, trimmed
8 unpeeled cloves garlic
1 tablespoon chicken stock
1 tsp olive oil
1 or 2 jalapeno peppers, cut into thin strips (do not seed)*
2 teaspoons lemon-flavored olive oil (or 1-1/2 tsp. olive oil and 1/2 tsp. lemon juice)
Salt
In a large bowl toss together beans, garlic, chicken stock, olive oil, and jalapeno pepper; set aside. Fold a 36x18-inch piece of heavy foil in half to make an 18-inch square. Place bean mixture in center of foil. Bring together 2 opposite edges of foil; seal with a double fold. Fold remaining edges together to enclose the beans, leaving space for steam to build.
For a charcoal grill, place bean packet on the rack of an uncovered grill directly over medium coals. Grill for 20 minutes, turning once. Remove packet from the grill and cool slightly. Carefully open packet (some steam will escape). Return open foil packet to the grill rack. Continue grilling 5 minutes more or until beans are just browned and crisp-tender, stirring occasionally. (For a gas grill, preheat grill. Reduce heat to medium. Place packet on grill rack. Cover and grill beans as above.)
Transfer beans to a serving bowl. Drizzle with lemon-flavor olive oil. Season to taste with salt. To serve, remove peel from garlic cloves, mash lightly, and divide cloves among servings of beans.



Grilled pound cake and Espresso Chocolate Sauce


Plan time: Sauce can be make One day in advance

2 Tbsp boiling water
1 Tbsp instant espresso coffee powder
3/4 cup whipping cream
1 Tbsp light-color corn syrup
8 ounce special dark baking chocolate or semisweet chocolate, finely chopped (about 1-1/3 cups)
1 16-ounce loaf prepared or frozen pound cake*, thawed
1/4 cup orange juice or 2 tablespoons orange juice with 2 tablespoons orange liqueur
1 cup whipping cream, whipped,
1/2 cup pecan/almonds or any of your favorite nuts, (toasted and chopped )

In a very small bowl, combine boiling water and espresso powder. Set aside. 
 
For chocolate sauce: In a small heavy saucepan, combine the 3/4 cup whipping cream and the corn syrup. Bring to boiling; remove from heat. Stir in espresso mixture. Add chocolate all at once. Let mixture stand, covered, for 4 minutes. Whisk until chocolate is melted and mixture is smooth. Cover to keep warm.

Cut pound cake into eight 3/4-inch-thick slices.* Poke each slice several times with the tines of a fork. Drizzle orange juice evenly over cake slices.

For a charcoal grill, place cake slices on the rack of an uncovered grill directly over medium-hot coals.

Grill for 2 to 4 minutes or until toasted and heated through, turning once halfway through grilling. (For a gas grill, preheat grill. Reduce heat to medium-high. Place cake slices on grill rack over heat. Grill, uncovered, as above.)

Serve grilled cake slices with whipped cream, pistachio nuts, and chocolate sauce.

I LOVE this poem... "The Weeds"

The first time I read this blog Eggbeater.com written by Shauna Fish Lyndon, I read this passage below. For starters her site is a haven for chefs.. She is a on the job trained chef with over 16 years in the field. If you're at all interested in the world of professional cooking she keeps it REAL.. Food Fashion: Dressed to Ingest..



While relaxing before work from my rainy Farmers market experience (more on that later) I wondered what would come up if I Goggled Food/Fashion.. I came across this magnificent collection from Korean artist Sung Yeonju. The entire collection is made of food... and it's pretty FREAKING amazing.. He also is the stylist responsible for Lady Ga Ga's meat dress on the cover of Vogue... Can you guess what he used on some of them?? I was mesmerized..the Bubble Gum Dress is bananas!!

HERSTORY – Paying respect, shining a light, encouraging growth amongst chefs of African descent

The first African American FEMALE chef, as women chef and more so a black female chef, I owe her. For one I didn't even know she existed. How it all started was I had to write a paper for a class at school and my topic started off with “Women chefs” as I was doing my research I came to find out that while there are just a few women chefs that are recognized, I found NONE of african descent, and only one male was of African descent the amazing Chef Marcus Samulason. I searched through all pictures from the James Beard Awards, and still I found nothing. This both angered and motivated me, how on earth is this possible. But sure enough I found none. This bothered me to no end, and that’s why I will highlight not only women but more specifically the African American chef both male and female.. I hope you enjoy.

Its only fitting that my first entry is about Chef Edna Lewis
A tall, commanding woman, Edna Lewis was also a giant in the culinary world as well as in life. The granddaughter of freed slaves, Edna would grow up to be a great chef, culinary ambassador, and caretaker of genuine Southern cooking. She would inspire a generation of young chefs and ensure that the traditional folkways of the South would not be forgotten. More than a skilled cook, Edna Lewis touched the lives of those around her with grace and the beauty of life. She will be deeply missed.

It's Here! Bocage Catering – Tailored to your taste..

.So besides working on "Plantation F", being a full time mom and student, my spirit, (you know that voice in the back of your mind, the whispers the “truth”) just won't stop telling me “do it! Do it! Do it! DO IT! ” like a chant that kept getting louder and louder.. And just as that voice was about to hit a fever pitch scream my fantastic friend and colleague fashion stylist extraordinaire (no really click her name if you think I'm exaggerating) Raygon Fields asked me (despite me adamantly saying or psyching (as in psyching myself out) that I was not ready) to cater an event she had coming up. It's Ray , it's paid and I get to do what I love.. So I accepted.. I worked the event and things took off I had to get a logo (thankful for Cynthia Stepechi) order cards i and start to work on the site

That was about 6 months ago and now I'm ready to redefine catering, elevate the expectation beyond the buffet..
The site is still a work in progress.. I still need to widdle down my breakfast sample menu as well as upload ALL my pix for the gallery.. After that I have a photo shoot coming up because lets face it the pix can be better.. But the photo shoot means narrowing down what dishes will be the best to highlight on the site, which means conceptualization each one (plating, garnish, plates) and I need at least 25 pixs..As overwhelming as it sounds I can't sleep because I'm thinking about plating.. It's rather amazing..

I'm sure Food Fete will serve as a the landing board for me to vent about of my gigs and the process/growing pains, lessons, warnings, adventures, successes, experience' adventures that I'm sure will come. In advance I am thankful for each gig I get, each and every one.. And so it begins..

Whats for dinner?




This morning I faced the question that most chefs face every day.. What do I have, (thawed out chicken) and what can I do with what I have. I mean its chicken breast.. K is finicky about excessive rice, and to be frank I was too, so I looked down and low and behold potatoes.. yawn..potatoes and chicken.. I knew wanted something herbey and spicey and I think yum chimmichuro marinade for the chicken. Lastly I needed a veggie and a sauce..my freezer popped out peas.. where I can make it both veggie and sauce.. here's what unfolded:

Chimichurro chicken, crusty potato wafers and pea puree

Chicken Marinade (serving 4)

2 whole Chicken Breast – sliced on a bias

1 cup - Parsley

2 tablespoons - Red pepper flakes

5 clovevs – Garlic minced

¼ cup - Red wine vinegar

1 cup – Good Olive oil

To taste- Salt / Pepper

Blend all ingredients and marinate for at least one hour. Now, make your flour mix.. ALWAYS season your flour, I used garlic powder and salt but feel free to add any herb or seasoning that you used in the panko mix for the potatoes. Put aside till ready to cook chicken

Dust chicken breast in flour and brown chicken on all sides put in oven for 20 mins at 350 degrees

Herb potato wafers

5 – russet potato – peeled and cut into 2 inch discs

1 cup - panko bread crumbs

1 ½ tbsp – each dry herbs (oregano, parsely, rosemary, thyme,

2 tbsp - garlic(powder)

2 egg whites (for egg wash)

1 tsp- of water

To taste- salt/ white pepper

flour

1 tbsp - salt

Peel and slice potato into 2 inch slices (note* have some water available to put potatoes in while skinning and cutting to prevent oxidization aka brown ass potatoes) but potatoes in heavily salted water, bring to bowl cook till al dente. Ice bath and drain /dry. Once dry season with salt and pepper


While potatoes are drying/cooling make your panko crumbs mix panko, herbs, salt/pepper , mix your egg wash mix the egg whites with water ,salt and white pepper. Put oil pan (about ½ way up pan) and heat till 345-350 degrees..

Time for assembly, dip potato into egg wash, then into the panko mixture. Press down (so you're assured the panko/herbs stick)


Place on grill sheet for about 20 mins (this lets the crumbs get friendly and stick to potato).

Once oil is @ the right temp cook potatoes till golden brown about1 min on each side.

Drain and serve or put in oven to store (if not serving immediately)


My pea puree (makes 2 cups)

½ bag frozen peas (about 2 cups)

¼ cup diced onion

6 garlic

6 slices bacon

3 tbsp - red wine

1 - c.stock

½ cup – plain yogurt

To taste - salt/pepper

3 tbsp - butter

2 tbsp - lemon juice

Put bacon in cold sauce pan, turn up heat to med-low and render fat then add onions and garlic. Cook till trans add peas cooked 2 mins, add red wine cook 3 mins add c. stock reduce to simmer. Cook for 10 mins.


When done remove bacon and put in food processor or blender, add butter, lemon juice and yogurt. Blend till smoothy consistency. Strain liquid back into pot with cheescloth or strainer chop bacon and add back to pot serve or reserve till serving...

Here is the finished product pea puree at the bottom with red pepper flakes, potato wafers on top chicken on top of that.. twas YUMMY! Tell me your thoughts did you try this recipe?
